Sicilian pizza with goat's cheese and pesto

12 slicesSicilien bread, 1 cm (1/2") thick12 slices
125 mlbasil pesto1/2 cup
30 mlolive oil(2 tbsp.)

Toppings:

180 mlFinely chopped red onion (approx. 1/2)(3/4 cup)
3 Sliced Italian tomatoes3
250 mlChopped zucchini or fresh mushrooms(1 cup)
150 gGoat's cheese, sliced or crumbled(5 oz)
To tasteFresh ground pepperTo taste
Preparation :
 

Preheat oven to 200°C (400°F).
 
 

Mix pesto and olive oil.
 
 

Place Sicilian bread slices on a cookie sheet and lightly drizzle with the diluted pesto.
 
 

Evenly spread toppings over Sicilian bread slices, ending with the cheese.
 
 

Bake in the middle of the oven for 8 minutes or until cheese is melted and golden.
 
 

Finish baking on broil as needed.
 
 

Serve immediately with a green salad.

Cooking : 10 minutes
