Sicilian pizza with goat's cheese and pesto
12 slices
Sicilien bread, 1 cm (1/2") thick
12 slices
125 ml
basil pesto
1/2 cup
30 ml
olive oil
(2 tbsp.)
Toppings:
180 ml
Finely chopped red onion (approx. 1/2)

Sliced Italian tomatoes

250 ml
Chopped zucchini or fresh mushrooms
(1 cup)
150 g
Goat's cheese, sliced or crumbled
(5 oz)
To taste
Fresh ground pepper
To taste
Preparation :
Preheat oven to 200°C (400°F).
Mix pesto and olive oil.
Place Sicilian bread slices on a cookie sheet and lightly drizzle with the diluted pesto.
Evenly spread toppings over Sicilian bread slices, ending with the cheese.
Bake in the middle of the oven for 8 minutes or until cheese is melted and golden.
