Apple Blueberry Streusel Muffins

Makes 8 large muffins or 12 medium muffins

Ingredients:

Muffins

1/2 cup brown sugar

1 tsp. cinnamon

1/2 tsp. nutmeg

3 tbsp. butter melted

1 tsp. vanilla extract

2 apples peeled, cored and grated

2 eggs

1 cup buttermilk
* if you didn’t have buttermilk, use 1 cup of milk and add 1 tbsp. white vinegar. Allow milk to sit for 5 minutes.

1/2 Loaf of Maison Cousin® Belgian bread cut into ½ inch cubes (roughly 3 cups)

2 cups fresh blueberries

Streusel

1/4 cup flour

1/4 cup brown sugar

3 tbsp. butter melted

1/2 cup oats

1/4 tsp. nutmeg

Directions: 

STREUSEL

In a small bowl stir all ingredients together and set aside.

MUFFINS

  1. Preheat oven to 350°F (176°C). Line muffin pan with liners. * can use regular sized liners to make 12 muffins or you can use large liners for 8 muffins.
  2. In a medium size bowl, whisk together; sugar, cinnamon, nutmeg, melted butter, vanilla and eggs until thick and creamy. Stir in apples and milk until combined. Add bread and blueberries; gently stir until bread is generously coated and all ingredients are combined.
  3. Generously fill your prepared muffin cups with mixture. Spoon streusel over each muffin.  
  4. Bake for 30-35 minutes until tops are golden browned and puffed. Allow muffins to cool 5 minutes before removing from pan.  Serve warm or chilled.
