Crispy Miso Ginger Fried Chicken Sandwich with Kimchi

Ingredients:

Recipe Ingredients

4 Maison Cousin TM Calabrese buns

4 boneless skinless chicken thighs

½ cup corn meal

¼ cup flour

1/2 tsp. baking soda

2 cups veg oil, for frying

3 tbsp. garlic aioli

1 tbsp. ginger paste

2 cups preferred Kimchi

Handful fresh clitanro

Marinade Ingredients

¼ cup Miso paste

¼ cup low sodium Soy sauce

2 cloves garlic, minced

1 tbsp. ginger paste

½ tsp. chili flakes

Directions: 

1. In a medium sized bowl, stir together marinade ingredients. Place chicken thighs into marinade, fully coat and refrigerate for 3 hours or overnight.

2. In a medium sized bowl, combine corn meal, flour and baking soda.

3. In a large saucepot, bring oil to 375°F. Transfer marinated chicken to flour mixture and generously coat chicken. Using metal tongs, gently place chicken thighs into oil. Fry chicken 6-10 minutes until golden brown. Transfer to a sheet of paper towel.

4. Toast buns. In a small bowl, stir together aioli and ginger paste. Spread mayo over bun bottoms, top with fried chicken and kimchi. Garnish with cilantro leaves and top with bun top.
