French Onion Roast Beef Sandwich
4 Maison CousinTM Pretzel buns
2 lg. sweet onions, sliced
1 tbsp. olive oil
2 tbsp. unsalted butter
1 tbsp. fresh thyme, finely chopped
1 cup beef stock
200 grams sliced roast beef
1½ cups smoked gruyere cheese, grated
Salt and pepper to taste
1. Pre-heat oven to 400°F. Line a baking tray with parchment paper and set aside.
2. In a medium saucepan over medium high heat, melt 1 tbsp. of butter with brown sugar. Add onions and cook for 10 minutes until golden brown. Add beef broth and thyme and reserved butter. Simmer for 5 minutes and season with salt and pepper to taste. Keep jus warm for serving.
3. Toast buns and set onto lined baking tray open faced. Divide sliced roast beef, onions and cheese onto bottom bun half. Pour 2 tsp. of jus over each sandwich. Top with top bun half.
4. Bake for 8 minutes until cheese is melted. Serve each sandwich with remaining warm jus. Enjoy
