Ham and Swiss Brunch Muffins
1 Maison Cousin BaguetteTM, chopped into ½ inch pieces
3 large eggs
½ cup milk
½ cup heavy cream
1 jalapeno, finely chopped
1½ cups sliced smoked ham, chopped
1 cup Swiss cheese, grated
4 green onions, finely chopped
1. Pre-heat oven to 350°F. Line a muffin tin with large parchment liners and set aside.
2. In a large bowl, whisk together eggs, milk and cream. Stir in remaining ingredients. Allow bread to absorb milk mixture, roughly 10 minutes. Stir every so often during wait time.
3. Generously fill liners with mixture. Bake for 25-30 minutes until puffed and golden. Serve warm.
Tip: for appetizer size – simply chopped ingredients smaller and use a mini muffin tin. Bake at 350°F for 20 minutes. Makes 24 mini muffins.
