Harvest Pizza

Prep and Cook Time: 30 minutes


1 Maison Cousin TM Belgian Loaf

400g butternut squash, chopped

½ fennel bulb, thinly sliced

2 tbsp. olive oil

¼ tsp. each salt and pepper

1 cup gruyere cheese, grated

3 sweet Italian sausages

¼ cup pumpkin seeds

Parsley Pesto

1 bunch parsley, washed

2 cloves of garlic

1/3 cup olive oil

½ cup parmesan cheese, grated

Salt and pepper to taste


1. Pre-heat oven to 400°F. Line a baking tray with parchment paper. Place squash and fennel onto parchment and toss with olive oil, salt and pepper. Roast for 15-20 minutes until golden brown and squash is tender. Place mixture into a large bowl and set aside. Set lined baking tray aside for re-use.

2. In a large skillet over medium high heat, remove sausages from their casing and cook for 6 minutes until browned. Remove from heat and set aside.

3. Slice loaf in half horizontally. Place bottom half of loaf onto baking tray set aside. *Reserve top half for another time to make croutons.

4. Evenly spread pesto along cut side of bread. Distribute grated cheese, roasted vegetables and sausage. Sprinkle pumpkin seeds over top. Bake for 8 -10 minutes until cheese is melted. Slice pizza and serve warm.
