1 tbsp. olive oil, extra for drizzle
2 tbsp. soft cheese, crumbled (goat cheese or feta)
1 garlic clove, thinly sliced
3 cocktail tomatoes, sliced into 3
1 tbsp. fresh rosemary, chopped
1 tbsp. pitted black olives, chopped
2 tbsp. asiago cheese, finely grated
Salt and pepper to taste
1. Pre-heat oven to 400°F. Line a baking tray with parchment paper. Place bottom bun half face up onto parchment paper.
2. Brush bun with olive oil, top with crumbled cheese, garlic, tomato slices, rosemary, black olives and asiago cheese.
3. Bake for 10 minutes. Place top half of bun in oven and bake for additional 5 minutes until cheese is browned and bread is toasted. Sprinkle with salt and pepper. Top with bun top and serve warm.
