Pappa Al Pomodoro
1 Maison Cousin TM Baguette cut in small cubes
2lbs. cherry tomatoes
2 cloves of garlic, minced
1 White onion, finely diced
2 tbsp crushed red pepper flakes
1-28oz canned italian tomatoes
1 3/4 cup vegetable stock
Small piece of parmesan cheese rind (optional)
1. Preheat oven to 450F. Line a baking tray with parchment paper and add cherry tomatoes. Drizzle with olive oil and a pinch of salt and roast for 10 - 15 minutes
2. Meanwhile in a medium sauce pot combine 1 tbsp of olive oil with onion, garlic and crushed red pepper flakes and sweat on low heat for 10 minutes or until onions are translucent.
3. Add roasted cherry tomatoes, canned Italian tomatoes, vegetable stock, parmesan cheese rind and turn to high then bring to a boil. Reduce heat, add bread and simmer on medium heat for an additional 25 minutes.
