Picnic Chicken Salad Sandwich
2 Maison Cousin® Brioche buns
1 cup pre-cooked chicken, shredded
1/2 cup red grapes, washed and sliced
1 tbsp. fresh dill, chopped
1/2 cup plain Greek yogurt
1 tsp. lemon juice
1/4 cup whole pecans or walnuts, chopped
2 dill pickles, finely sliced
Salt and pepper
2 tbsp. cooked bacon, chopped
1 tbsp. unsalted butter
Handful of mixed greens
- In a bowl, stir together chicken, grapes, dill, yogurt, lemon juice, nuts and pickles until combined and season with salt and pepper to taste.
- Toast buns and spread butter evenly onto each bun half. Place lettuce on bottom bun, followed by chicken mixture, top with chopped bacon and bun top (butter side down). Wrap in parchment paper and refrigerate until ready to eat.
