Roasted Artichoke & Spinach Cheese Dip
1 Maison Cousin TM Belgian Bread
1 cup of marinated artichokes, drained and chopped
4 cloves of roasted garlic
125g cream cheese, room temperature
¾ cup mozzarella cheese, grated
½ cup roasted red peppers, chopped
¼ cup sour cream
¼ cup mayonnaise
¾ cup parmesan cheese, grated
1 cup baby spinach, washed and chopped
¼ cup chopped green onion
Pepper to taste
1. Pre-heat oven to 400°F. Line a baking tray with parchment paper. Transfer artichokes and garlic to tray and roast for 25 minutes until fragrant and browned.
2. In a large mixing bowl, combine, cream cheese, mayo and sour cream. Stir in half the grated cheeses, roasted artichokes and garlic, peppers and spinach. Season with pepper.
3. Reduce oven temperature to 350°F. Hollow out center of bread loaf, leaving a ½ inch bread base. Transfer to a lined baking sheet and fill with dip mixture. Top with reserved grated cheese. Bake until bubbly and cheese is melted, 25 minutes. Broil on low for 3 minutes to brown cheese top.
4. Allow bread dip to rest 5 minutes before slicing. Serve warm.
