Rustic Smoked Sausage Stuffing
1 Maison Cousin® French Baguette cut into 1-inch cubes
6 Roma tomatoes chopped
5 garlic cloves minced
2 tsp. each Salt and pepper
2 tsp. olive oil
3 tbsp. butter
2 Celery stalks sliced
2 carrots peeled and sliced
1 medium Sweet potato peeled and chopped
1 large onion chopped
2 tbsp. smoked paprika
3 tbsp. each Thyme and Rosemary
2 cups mild smoked sausages sliced
4 tbsp. rosemary
2 cups Vegetable broth
- Preheat oven to 350°F (176°C).
- Cut bread and reserve. Butter a 9 x12 baking pan and set aside.
- In a small bowl, gently stir chopped tomatoes with 2 cloves of garlic, olive oil, 1 tsp. each salt and pepper and 1 tbsp. of fresh thyme. Roast in oven on a lined baking tray for 25 minutes.
- While tomatoes are roasting; In a large sauté pan melt butter and cook, celery, carrots, sweet potato, onion and paprika until onions are soft. Add sliced sausage, broth, rosemary and remaining thyme. Gently simmer for 20 minutes. Add bread, remaining salt and pepper and roasted tomatoes; gently stir until bread is coated. Pour everything into prepared 9x 13 baking pan, bake for 20 minutes or until fragrant. Serve warm with a dollop of sour cream.
