Strawberry Crumble with Basil Whipped Cream

Ingredients:

Strawberry Filling

4 Maison Cousin™ brioche buns, tops removed

425 g strawberries, rinsed and quartered

½ cup sugar

⅓ cup cornstarch

1 tsp vanilla extract

Juice and zest of ½ lemon

Crumble Topping

½ cup oats

¼ cup slivered almonds

¼ cup chopped pecans

¼ cup sugar

3 tbsp cornstarch

Basil Whip

1 cup 35 % whipping cream

2 tbsp chopped fresh basil

2 tbsp confectioners sugar

1 tsp vanilla extract

Directions: 
  1. Preheat oven to 350°F.
  2. Make the strawberry filling by mixing all the ingredients, except the brioche buns, in a medium bowl. Stir to combine and set aside.
  3. Next make the crumble topping by mixing all of the ingredients together in a small bowl. Stir to combine and set aside.
  4. Lastly make the basil whip by processing all of the ingredients with a hand blender until thick and fluffy (approximately 1 minute). Be sure to not over whip. Set aside.
  5. Grease a muffin tin and stuff brioche bun bottoms tightly in muffin tins, pushing down in middle to create a cup. Bake for 10 minutes.
  6. Fill with strawberry filling, top with crumble and bake for an additional 20 minutes Remove from the oven and let cool.
  7. Remove from tins and serve with Basil whip
